Remove eggs in time to heat. Beat the yolks gradually with the 100 gr sugar and citrus peel and then add the semolina in the rain. Whisk the egg whites with a pinch of salt and lemon juice. Incorporate the egg whites into the yolks, mixing with a spatula. Put the pudding in a Teflon mold and bake on low heat for 15-20 minutes.
Separately boil the milk with the sugar, citrus peel and vanilla. Remove the pudding, let it cool a bit and add the hot milk little by little until it absorbs the liquid.
