Delicious and nutritious, roasted chickpeas make for a healthy snack. Roasted in the oven, these are a nice crunchy, high fibre alternative to nuts.

- 1 (400g) tin chickpeas, drained
- 2 tablespoons olive oil
- salt (optional)
- cayenne pepper (optional)

- Preheat oven to 230 C / Gas mark 8.
- Pat chickpeas dry with kitchen roll. In a bowl, toss chickpeas with olive oil, and season to taste with salt and pepper. Spread on a baking tray, and bake for 30 to 40 minutes, until browned and crunchy. Watch carefully the last few minutes to avoid burning.

Altered ingredient amounts.When roasting chickpeas you definitely do not need this much olive oil! Try just lightly greasing the baking tray instead.-07 Aug 2008

Altered ingredient amounts.If they're soft in the middle, you need to roast them about another 10 minutes (based on mine). I started with 20 min on 180 and then went another 15 min or so on 230 to get them nice and crunchy - they get small and nutty. They didn't burn at all. I used about 1TB oil and about a TB of curry powder and a few dashes of cayenne.-07 Aug 2008
